Ingredients
To make Mint Coriander Chutney:
1. Roast Dals and Aromatics: Heat oil in a pan, add chana dal and urad dal, and roast until golden brown. Add garlic, ginger, onions, and green chilies. Sauté for 2-3 minutes. Add fresh grated coconut and sauté for another 2-3 minutes.
2. Add Flavouring Ingredients: Add tamarind extract, curry leaves, mint leaves, and coriander leaves. Add salt and mix well. Cook the ingredients until they are done. Let them cool down completely.
3. Blend Ingredients: Transfer the cooled ingredients to a blender, add lime juice, and blend well. Adjust the consistency by adding water while blending. Transfer the blended chutney to a bowl.
4. Prepare Tempering: In a pan, heat some oil. Add mustard seeds and cumin seeds along with fresh curry leaves. As the mustard and cumin seeds begin to sputter, turn off the heat. Add this tempering to the chutney and mix well.
5. Serve: Your Mint Chutney is ready! Serve it along with samosas, dosa, kebabs, or various other chaat items. Enjoy the refreshing and flavourful chutney!
