Ingredients
Sooji (semolina) – 1 Cup
Onion – 1 big
Green Chilies -2
Ginger - 1/2 Tsp
Mustard seeds- 1tsp
Cumin seeds- 1tsp
Hing (asafoetida)
Curry leaves
Pinch of haldi (turmeric)
Salt (as directed by your dietitian)
Water - 1 Cup
Ghee Or Olive Oil - 2 Tsp
Instruction
1. In a pan, dry roast semolina (sooji) over low to medium flame until it turns light brown, then transfer it into a bowl.
2. Next, chop onions, green chilies, and ginger.
3. In a hot pan, add ghee or olive oil. Add mustard seeds and cumin seeds, sautéing until you hear a crackling sound.
4. Add hing, green chilies, ginger, and curry leaves. Sauté for about a minute. Then, add the chopped onions and cook until they become transparent.
5. Add water and salt as needed. Mix well.
6. Once the water comes to a boil, add the roasted sooji and keep stirring to avoid lumps.
7. Cover the pan and cook on a low flame until the water evaporates.
8. Remove the lid, stir once again, and your healthy sooji upma is ready. Serve it hot and enjoy!
