Vegetable Vermicelli



Ingredients
  • Vermicelli - 2 Cups (Suji or wheat)
  • Water - 1 Cup
  • Salt - As Per The Taste
  • Tomatoes- 1-2 Chopped
  • Seasonal Vegetable - 1 Cup
  • Green Chili Chopped - 1-2
  • Curry Leaves - 7-8 pcs
  • Asafetida / Hing- A Pinch
  • Lemon - 1
  • Coriander - 2 Tbsp


  • Instructions:

    1. Fry Vermicelli:
    - In a frying pan, heat some oil or ghee over medium heat.
    - Once the oil or ghee is hot, fry the vermicelli until it turns golden brown.
    - Transfer the pan-fried vermicelli to a plate.

    2. Sauté Vegetables:
    - In the same pan, add more oil if needed. Sauté the chopped onion until it becomes translucent.
    - Add the chopped tomatoes and assorted vegetables (carrots, peas, beans, etc.). Cook until the vegetables are tender.

    3. Season and Add Vermicelli:
    - Season the vegetable mixture with salt and pepper to taste.
    - Add the pan-fried vermicelli to the vegetables.

    4. Simmer:
    - Pour a cup of water into the pan. Reduce the flame and let it simmer.
    - Cover the pan and cook until the vermicelli has soaked up the liquid.

    5. Garnish:
    - Finally, garnish the Vegetable Vermicelli Upma with finely chopped coriander leaves.
