Ingredients
- Carrot - 1 medium chopped
- Beans - 1 cup chopped
- Potato - 1/2 chopped
- Capsicum - 1/2 chopped
- Any other vegetable of choice
- Onion - 1 diced
- Tomato - 1 chopped
- Bell peppers - 1 chopped
- Green peas - 1/3 cup
- Ginger garlic paste - 1 tsp
- Mustard oil - 2 tsp
- Garam masala - 1/2 tsp
- cumin seeds - 1/2 tsp
- Coriander powder - 1 tsp
- Turmeric powder - 1 tsp
- Red chilli powder - 1 tsp
- Lime juice - 1 tsp
- Fresh coriander leaves - 2 tsp chopped
- Salt as per taste
Instructions
1. First, heat the oil in a large pan over medium-high heat.2. Next, add cumin seeds, garlic and ginger paste and cook for 1 minute. Add the onions and cook for another 5 minutes, stirring occasionally.
3. Then, add the tomatoes and all deshi spices – garam masala, coriander powder, turmeric, chili powder and salt. Cook for 2 minutes, stirring constantly.
4. Add chopped potatoes, carrots, beans, or any vegetables of your choice and cook.
5. Then, add hot water or vegetable broth. Bring to a boil, reduce heat and simmer for 10 minutes.
6. Add the fresh coriander leaves and lime juice and stir to combine.
7. Finally, serve over hot steamed rice or serve with hot chapati. enjoy!
