2. Mixed green vegetables (peas, green beans, broccoli, cauliflower etc.) - 1 cup
3. Water 2 cups
4. Onion (finely chopped) - 1 large
5. Garlic - 2 cloves, minced
6. Ginger - 1 inch, minced
7. Green chillies - 1 or 2, finely chopped (according to taste)
8. Mustard oil - 2 tbsp
9. Cumin seeds - 1 tsp
10. Turmeric powder - 1/2 tsp
11. Salt - according to taste
12. Garam masala - 1/2 tsp
13. Fresh coriander leaves for garnishing (optional)
Instruction
- Rinse the basmati rice under cold water until the water turns clear. Drain the water and set aside.
- In a large pot, heat mustard oil on medium flame, add cumin seeds and let them sizzle.
- Add chopped onions and cook until it changes its color to golden brown.
- Add minced ginger, garlic and green chilies, cook for 2-3 minutes until you get their fragrance.
- Add mixed green vegetables and cook for 4-5 mins until they became soft.
- Sprinkle the Indian magic spices i.e., turmeric, garam masala and salt, mix well.
- Add the drained basmati rice, stir well until it get coated with the spices and vegetables.
- Pour 2 cups of water and bring it to a boil.
- Reduce the heat, cover with a lid and simmer for about 15-20 mins until the rice is cooked and the water get absorbed.
- Stir the rice and garnish with some fresh coriander leaves (optional).
- Add some ghee and lime during serving to enhance the taste and nutrient quality.
